I‘m fairly certain I was responsible for only the grocery portion of this vegan pudding, because the since unopened document with the recipe from September 16th, 2006 that I found is 50% an early-relationship-stages love note to someone who is not me, with a promise to see whoever this was to at 6, and a note that the Reed Webmail server crashed.

But apparently 2006-me was given options in terms of recipe:

Option 1: Chocolate puddin’

  • 2 lbs. silken tofu
  • 5/3 C. sugar
  • 4/9 C. Cocoa
  • 1/3 C. Oil
  • 2 t. vanilla
  • 1/3 t. salt
  • lemon to taste?

Option 2: Chocolate Mousse

  • 20 oz. silken tofu
  •  2.5 lbs chocolate chips !!! (melted into the tofu as you food process it)
  • 6 oz. maple syrup

I will be making neither of these but Option 2 actually sounds amazing in its simplicity.
